I did that on mine.
iirc the command looks like ucon64 -xgd3 rom.sfc (without gui). Then progress bar appears. It will fill the banks of the gdsf7.
Also, you need to make sure you have the right cable type. The gdsf7 will show "link" on screen when you start the console holding the right trigger button if the cable is right.

I figured out how to get it working.

The mistake I was making was when I configured the path to the ucon64 executable I was selecting the ucon64 frontend instead of ucon64.exe.

Once I did that the program recognized the parellel port driver and I am able to transfer ROMS.

I'm having problems transferring files to my GD7 from parallel. I'm just using a standard parallel cable. When you start the GD7 with the computer connected, in the right hand corner does it say "LINK" or "LINKING"? Mine just says linking and never changes. Anything I could be doing wrong?
